Hello Spookies! If you’ve read my blog at all, you know that I like it when things are very, very easy. Being allergic to too many things, I can’t always indulge in Halloween candy or Halloween-themed treats. So when I saw Trader Joe’s Gluten Free Pumpkin Bread and Muffin Mix, I was ecstatic.
There’s no milk in the ingredients, so I could check that off. Unfortunately, I can’t have cinnamon. I’m sure there is at least a pinch in there, but it wasn’t listed. And spoiler alert I didn’t get sick from the muffins.
This muffin mix was the easiest thing to follow. If you are over the age of 5 and have your parents’ permission to use the oven, you could follow this mix recipe. In addition to the mix, it calls for water, oil and 2 large eggs.
Basically, mix up everything and pour into the muffin pan. Bake at 400 degrees for 20-22 minutes and TA-DA! The only thing differently I did was add in chocolate chips to half of my muffins.
Pumpkin muffins aren’t inherently Halloween-y so I decided to spruce them up a bit. I used these paper cups and cupcake toppers from Target.
I displayed them on my sugar skull plate, which is not related to Halloween (other than timing of the year) but Husband and I are already mixing the Irish and Mexican cultures to pass on to our son (festival of Samhain and Dia de los Muertos).
I tried the muffins and absolutely loved them. I bought the mix for $2.99 and if Trader Joe’s still has it, you bet your KitKat I’m getting more.
